Bitter Digestive Aid Salad

Ingredients
  

  • 2 tbsp Dijon mustard
  • ½ tsp apple cider vinegar
  • 1 tsp honey
  • 1 tsp chopped fresh parsley or coriander
  • 100 ml cold-pressed walnut oil
  • 75 g rocket leaves
  • 2 heads chicory separated into individual leaves
  • 100 g walnuts or Brazil nuts roughly chopped or whole
  • pecorino cheese shavings optional

Method
 

  1. In a bowl whisk together the mustard, apple cider vinegar, honey and parsley/coriander.
  2. Gradually add the walnut oil, whisking all the time, until an emulsion is formed.
  3. Place the rocket, whole chicory leaves and walnuts/Brazil nuts in a large bowl, drizzle on the dressing and toss to coat.
  4. Season to taste with freshly ground black pepper.
  5. Serve immediately topped with a few pecorino shavings.

Notes

Bitter greens stimulate gastric acid production, aiding digestion and overall nutrient absorption. They help balance the taste buds and can relieve sugar cravings.
